Italian style tomato kofta

the ingredients

- half a kilo minced lean meat free of fat;

- 3 pieces of ripe tomatoes well cut small;

- Copan fresh tomato juice or a packet of purée tomatoes 700 grams;

- A green basil, half cut and the other full.

- parsley parsley small clip;

4 cloves of garlic, cut into small pieces;

- 3 tablespoons Parmigiano Regano cheese, known as parmesan, grated;

- 1 century red pepper clip (optional);

- A large ball of fresh mozzarella cheese cut into slices (can be dispensed with or use another cheese)

- 4-5 tablespoons olive oil for frying;

- 1 tablespoon freshly ground black pepper;

The way

First: In a pot put the kofta and add parsley and parmesan cheese and mix them well but without exaggeration so as not to stiffen the kofta and close its pores. Then we work the kofta in the form of medium balls (tradition, the size of the chor is large enough to fill the palm of the hand, it is possible to work between 10 to 15 balls of half a kilo meat minced to the desired size).
Second: In a sauteed olive oil and on medium heat put kofta balls in small groups and turn them carefully from at least two sides until red. We are careful not to flake the kofta until you level and take a color from the side on the fried so as not to crumble. Put kofta balls on tissue paper until the oil is absorbed.

Third: In the same oil, put the pepper horn for a minute and continue to move it, then lift it aside.

Fourth: Now the fried oil will have a little oil, add garlic and stir it for a minute at most continuously without taking the color, then add the chopped tomatoes with a little salt and move it well. Cover the fried chicken until the tomatoes are well crushed. But we raise the lid continuously to stir the tomato and garlic mixture.

Fifth: In a porcelain oven, glass or metal oven, put the fried tomatoes, tomato juice, purée, chopped basil, black pepper, fried pepper and a little salt and mix well.
Sixth: Put kofta balls in the oven tray, making sure they are all covered with tomato sauce. Then put the Chinese in an oven at 200 degrees or above the medium temperature if the gas oven is for 20 minutes. Then we take the Chinese out of the oven and put between the kofta balls slices of mozzarella cheese and return the Chinese to the oven for 15 minutes. After spraying the whole basil leaves, sprinkle with rice or bread.
